Sate Kambing

Bahan-bahan:

500 gram daging kambing

Beberapa lembar daun pepaya untuk membungkus daging supaya empuk

Secukupnya tusuk sate

Bumbu marinasi:

12 siung bawang merah

5 siung bawang putih

1 sdm ketumbar

2 butir kemiri

1/2 lingkaran gula jawa

1 ruas jahe, geprek

5 lembar daun jeruk, iris

1 sdm royco sapi

Bumbu oles:

3/4 bumbu marinasi

50 ml kecap

3 sdm minyak sayur

Bahan sambal kecap:

1 buah tomat potong potong

Secukupnya kol atau sayuran lain

5 siung bawang merah, iris tebal

10 cabai merah, iris tebal

Secukupnya kecap

Cara membuat:

  1. Bungkus daging dengan daun pepaya sampai tertutup sepenuhnya. Diamkan selama 30 menit, kemudian potong-potong dan tusukkan ke tusuk sate yang sudah dibersihkan. Disarankan di selang-seling antara daging dan lemaknya agar gurih.
  2. Haluskan semua bahan bumbu marinasi (kecuali daun jeruk dan jahe). Kemudian balurkan bumbu marinasi ke seluruh permukaan daging.
  3. Panaskan teflon, oleskan sedikit minyak secara merata. Kemudian panggang sate sampai setengah matang, lalu olesi dengan sisa bumbu halus, kecap dan minyak. Panggang lagi sampai matang. Note: apinya cenderung kecil saja.
  4. Sate kambing siap disajikan.

Bahan-bahan:

1 kg daging kambing

Bahan olesan:

2 sdm kecap

1 sdt lada bubuk

1 sdm saus tomat

Bumbu marinasi:

1 sdm ketumbar

7 bawang putih

7 bawang merah

Seujung sdt garam

Bahan sambal:

5 bawang merah, iris kotak kecil

10 cabai rawit, iris kecil

1 buah tomat besar, iris kotak kecil

1 sdt air jeruk nipis

5 sdm kecap manis

Mentega untuk olesan

Cara membuat:

  1. Potong-potong daging kambing seukuran sate.
  2. Marinasi daging kambing yang sudah dipotong kotak, aduk rata.
  3. Masukan ke tusuk sate sampai habis.
  4. Olesi dengan mentega, bakar sate di atas pan/teflon/api bakaran. Jangan terlalu lama karena bisa keras dagingnya.
  5. Sebelum diangkat, dioles dengan bumbu olesan.
  6. Sambal kecap: atukan semua bahan, aduk rata.
  7. Siap disajikan.
