The raw material for Sumedang tofu is not imported soybeans, but local soybeans whose size is smaller but tastes more savory, called lurik soybeans. These soybeans have a quail egg-like pattern and contain a lot of starch. Before processing, these soybeans must be soaked for 5 hours. If it takes longer than that, the flavor will change!

Many say that tofu made outside Sumedang will not be able to compete with the taste of the original Sumedang tofu. Why? Because the water in Sumedang has a unique mineral content that makes the tofu chewier and longer lasting, even without preservatives!
Frying Technique that Makes it Super Crispy
The secret to the crispiness of Sumedang tofu lies in the frying technique. The oil used is always new oil in large quantities at high temperatures. In the past, peanut oil was the main choice, but now it has been replaced with regular cooking oil because it is more readily available.
